Soil: frank with the presence of silt, moderately sandy with gravel substrate and fossil tuff shallow.
Cultivation system: organic farming, with alternating row (one with grass and one extirpated).
Training system: Guyot with about 3300 vines / ha with 7 / 9 buds per vine

Microclimate: The vintage 2010 was characterized by a rather rainy and cold spring, a dry and moderately warm summer, while in September there were good temperature and low rainfall.
Harvest: picked by hand in the first week of October 2013, in boxes of 15 kg.
Winemaking: the grapes are selected on a double sorting table before and after the destemmings, following a gently pressing flowed by gravity into conical oak vats where we held the alcoholic and malolactic fermentation the next. Finally, the wine remained in barrels and barrels of oak forests of Allier, Nevers and Tronçais for the next 18 months.
After the blend of the different barrels the wine rests in cement tank for another 12 months.
Bottling without filtration and fining of fine sediment entering the market after aging in bottle for at least 18 months. Placing scheduled to begin in December 2016.

Sensory analysis:
Deep ruby red color with hints of black cherry .
Bright and inviting nose of red cherry and blueberry aromas.
Taste of rich and fleshy cherry and blackberry enriched by a delicate hint of black pepper, with smooth tannins that flow into a long balsamic final.
